To make the Pasetti and Boote oxymel, they cold-infuse hard herbs (thyme and rosemary) and bitters with citrus zest in Wilding Cider vinegar before blending with Welsh honey and bottling. The result is a grown-up Italian-style alcohol-free aperitivo with a bitter edge when served with soda water over ice and a citrus slice.
