Braised Lemon & Tarragon Runner Beans with Fresh Corn Polenta

For the polenta

  • 2tbsp extra virgin olive oil
  • 25g unsalted butter
  • 4 onions, peeled and finely sliced
  • 1 x tin sweetcorn
  • 400ml vegetable stock
  • 200g quick cook polenta
  • 100g extra mature cheddar, grated
  • 50g parmesan, finely grated
  • Salt & pepper

For the green beans

  • 2tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar diluted with 100ml water
  • 100ml vegetable stock
  • 400g stringless runner beans, stalk ends discarded, then cut into 3cm angled pieces
  • 1 garlic clove, crushed
  • 150g cherry tomatoes, quartered
  • ½ bunch tarragon, leaves picked
  • Zest and juice of 1 lemon
  • Salt & pepper

 

One Pan Garlicky Courgette & Mint Spaghetti

  • 4 courgettes
  • 1tbsp butter
  • 2tbsp light olive oil
  • 6 garlic cloves, finely sliced
  • Leaves from 1 bunch mint
  • 400g dried spaghetti
  • 100ml extra virgin olive oil, keep 25ml for serving
  • Zest and juice of 1 lemon
  • Parmesan, to serve
  • Salt & pepper

 

Chickpea, Summer Tomato & Herb Soup

  • 4tbsp extra virgin olive oil, plus extra for drizzling
  • 2 onions, peeled and finely sliced
  • 6 garlic cloves, peeled and finely sliced
  • 1tsp fennel seeds
  • ¼tsp chilli flakes
  • 2 bay leaves
  • 500g mixed summer tomatoes, roughly chopped (use a combination of cherry tomatoes, juicy vine tomatoes and a mix of colours and shapes)
  • 1 x 600g jar chickpeas
  • 100g spinach, washed and roughly chopped
  • 200ml vegetable stock
  • 1 small bunch basil, leaves picked
  • 1 small bunch oregano, leaves picked
  • ½ small bunch dill or chervil, leaves picked
  • 1tsp-1tbsp red wine vinegar, according to taste
  • 4 heaped tbsp full fat crème fraiche
  • Salt & pepper
